In this episode of "The Dué Way" Chef Filippo Fiori walks us through the process of making ravioli by hand. This vegetarian dish is filled with Organic Spinach, Italian Ricotta, and Parmigiano. Each layered sheet of pasta is hand cut, and hand pressed. It is then paired with a butter and sage sauce and of course, more Parmigiano.
This dish can be paired with any sides on the menu! This could include more cheese (burrata anyone?!), or simply a piece of toasted sourdough bread.
