On this episode of The Dué Way, we present: Parmigiano Reggiano, The King of Cheese.
If you’ve been to Dué you may have noticed that our Parmigiano Reggiano is an add-on ingredient from our kitchen, instead of in a cheese shaker on the table. In true Italian form, we take pride in having even the simplest ingredients done properly. Of course, we source almost all of our ingredients locally from the PNW, but this is simply one we could not!
At Dué use Parmigiano Reggiano that is aged 24 months and is imported only from Italy. True certified Parmigiano Reggiano can only be from certain cities of Italy, including its namesake, the city of Parma. Nothing can beat the real thing, so we never use imitation Parmesan.
We make sure to preserve the naturally fruity and nutty flavors of the Parmigiano Reggiano. To achieve this we grate this fresh for our dishes as both garnish, and in the sauces. Preparing this for a shaker would be a disservice to the Parmigiano Reggiano as it would oxidize and lose its complex flavor profile. The quality and the complexity of this cheese is why we not so lightly call it, “The King of Cheese”.
