Every host has the same fear: the tray is empty and half the room hasn't eaten. The other fear is a fridge full of leftover pasta for a week. The fix is a few numbers that Italian families have used forever, adjusted for how your party actually eats.
1. The Basic Numbers
Plan by uncooked weight. Dried pasta roughly doubles when cooked; fresh pasta already holds water, so you need a bit more of it.
| How it’s served | Dried pasta per person | Fresh pasta per person |
|---|---|---|
| Main course | 3.5 oz (100 g) | 4.5 oz (130 g) |
| One of several dishes on a buffet | 2.5 oz (70 g) | 3 oz (85 g) |
| First course or side | 2 oz (55 g) | 2.5 oz (70 g) |
| Kids under 10 | About half the adult amount | About half |
“In Italy, pasta is a course, not the whole meal. At an American party, it’s usually the main event — plan for that.”
2. Quick Math for Your Guest List
For pasta as the main dish, with salad and bread on the side:
- 10 guests: about 2.25 lb dried pasta (1 kg)
- 20 guests: about 4.5 lb dried pasta (2 kg)
- 50 guests: about 11 lb dried pasta (5 kg)
Then adjust for your crowd:
- Hungry crowds go up 20–25%. Teenagers, game days, anything after a workout.
- Office lunches go to the low end. People eat lighter at noon and head back to their desks. Planning an office lunch?
- More dishes means less pasta. If there are three mains, use the buffet numbers.
3. Sauce, Sides and Second Helpings
- Sauce: About half a cup per person for tomato and meat sauces, a little less for rich cream or cheese sauces.
- Mix the menu: Offer two or three sauces, including one vegetarian. People take a smaller scoop of each, so the total stretches further.
- Bread and salad: A green salad and focaccia fill plates without crowding the pasta.
- Keep it warm: Pasta firms up as it sits. Hold trays covered and warm, and toss with a splash of hot water or extra sauce before serving.

4. From Our Kitchen
We do this math every day. Our catering comes family-style: trays of fresh pasta, focaccia sandwiches, salads, desserts and Italian sodas, with vegan, vegetarian and gluten-free options so every guest is covered.
Our trays are sized for real appetites: a full tray of pasta serves 10 people and a half tray serves 5. Lasagna goes further: a full tray serves 18 and a half tray serves 9.
And we’re generous. Every serving of our fresh pasta is weighed at more than 5 oz, above the main-course numbers in the table, so nobody leaves hungry.
Order catering at least 24 hours ahead (48 hours for orders over $4,000) for pickup at any Due’ Cucina or delivery. Tell us your headcount and we’ll tell you exactly how much you need.
